Vegetarian Recipes with Onions that Even Meat Eaters will Love

What's the easiest switch you can make for the environment? Eat less meat!

On Mondays, we are exploring vegetarian meals for meat eaters. Cooking with seasonal vegetables can seem really limiting at first, but the possibilities are endless. And it is worth it. Just cutting one day of meat eating out of our diet can keep thousands of tons of CO2 out of the atmosphere a year. No seriously, it's that big a deal. Cutting down on fish (and only eating sustainable fish) can also help with our huge plastic problem, because plastic fishing nets are the largest source of plastic in our oceans. The production of fish and meat come at a huge environmental cost, and we are simply eating too much.


Plus, it's a great opportunity to have some new adventures and try new things. Just another way to take care of the planet AND make life a little bit better!

Our garden is really taking off, and one of the big surprises is the onions. We planted a lot, because last year was not an onion success. But right now, things are looking good for our onions. So now it is time to find lots of good onion recipes. 

Onions aren't everyone's cup of tea, but I think they can elevate so many different kinds of meals. My kids say they don't like them. But they like salsa (with onions) and pasta sauce (with onions) and chowder (with onions). The list goes on and on. It can be a sneaky ingredient, but it also works so well center stage, so let's give a little love to the onion for a minute. 



Ok, since we went to Austria, really all I want from food and this world is Austrian potato salad. Why don't we all just eat this all the time? Many recipes have bacon on it, but as long as you have some red onion, vinegar, and herbs, you have everything you need. This one from Serious Eats looks perfect. 



For a dish that really centers on onion, mujjadara makes delicious carmelized onions the star of the show. I love this recipe from Cookie + Kate, it isn't too complicated, and it's easy to see this for the miracle it is- carbs on carbs on carbs, friend. 



I keep thinking if you like fried foods, fried onions might make a good meat substitute. You could put these savory fried onions from Savory Experiments on a cool sandwich. Or you could just put it on top of green beans. I don't know why that is a thing, but it is, and it's meat-free, so who can complain?



Looking for another sandwich? This mushroom philly from Cozy Peach Kitchen looks pretty delicious. Mushrooms are a suprisingly good substitute for beef, and the onions and peppers are the best part anyway.

Some people really love french onion soup, and you can make it with no meat product easily. This French Onion Soup recipe from Lauren Caris Cooks is vegetarian, pretty easy, and a treat where no one will miss the meat.

  1. Our onions have been doing dreadfully this year! But we'll have lots and lots of carrots, by the looks of it. Honestly, I will eat onions in almost anything! So that's my favourite onion recipe. (ie. anything) haha :)

  3. Hi! This is a great recipe idea. Always good to try and aim vegetarian recipes at things meat eaters would like to eat too, since that's the main audience we should be trying to get to eat more veggie food!!

  5. So many onions! I eat them with most meals so definitely appreciate these recipes. One thing you can do with surplus and skins is freeze them along with peeling from other veggies to make your own vegetable stock!
