Summery Vegetarian Raspberry Recipes that Even Meat Eaters will Love
What's the easiest switch you can make for the environment? Eat less meat!
On Mondays, we are exploring vegetarian meals for meat eaters. Cooking with seasonal vegetables can seem really limiting at first, but the possibilities are endless. And it is worth it. Just cutting one day of meat eating out of our diet can keep thousands of tons of CO2 out of the atmosphere a year. No seriously, it's that big a deal. Cutting down on fish (and only eating sustainable fish) can also help with our huge plastic problem, because plastic fishing nets are the largest source of plastic in our oceans. The production of fish and meat come at a huge environmental cost, and we are simply eating too much.
Plus, it's a great opportunity to have some new adventures and try new things. Just another way to take care of the planet AND make life a little bit better!
This is the happiest time of year at our house, because our yard is exploding with raspberries. This year our raspberry patch is bigger than ever, so we will definitely get our fill of raspberry snacks, popsicles, and treats. With so many, I am also thinking we should use them in our savory meals. It may not be the most common savory fruit, but at least here in the PNW, we see berries everywhere, so I knew it had to be possible.

Summer chill attitudes and fresh berries means it must be time for brinner. You could do simple waffles or pancakes with raspberries, but I also think this peach and raspberry bowl from What Charlotte Baked looks really refreshing and delicious. We should do more simple bowls like these for dinner.
If you are looking for a yummy raspberry pastry for dinner, these raspberry crumb bars from A Dash of Megnut looks particularly delicious, but there are so many interesting scone, galette, and muffin recipes out there. Not the healthiest, but fun for a summer treat!
Raspberries really don't cook that well, so there are lots of ideas for fresh and raw preparations, mostly in salads. SoFab Food's summery salad with kale, berries, and quinoa looks filling, simple, and so yummy. I would totally eat this.
