Meatless Cauliflower Recipes that Even Meat Eaters will Love

What's the easiest switch you can make for the environment? Eat less meat!

On Mondays, we are exploring vegetarian meals for meat eaters. Cooking with seasonal vegetables can seem really limiting at first, but the possibilities are endless. And it is worth it. Just cutting one day of meat eating out of our diet can keep thousands of tons of CO2 out of the atmosphere a year. No seriously, it's that big a deal. Cutting down on fish (and only eating sustainable fish) can also help with our huge plastic problem, because plastic fishing nets are the largest source of plastic in our oceans. The production of fish and meat come at a huge environmental cost, and we are simply eating too much.



Plus, it's a great opportunity to have some new adventures and try new things. Just another way to take care of the planet AND make life a little bit better!




Because we did whole 30 this year, we have been really embracing cauliflower. It is the best fake carbohydrate in the world! We just had our first cauliflower crust pizza last week, and honestly, it was shockingly good. I really did not expect to like it as much as I did.

If cauliflower can replace carbs, and I still like it, then it must have some freaking magical powers. So let's celebrate this super food, that is going to make us all less carby and healthy. 



So we got a Caulipower pizza crust to try the first time, but by all accounts it's not that hard to make your own cauliflower pizza crust. I like this (very simple) recipe from The Sugar Free Diva, which only uses 4 ingredients, but pinterest has plenty of variations to try. 




Cauliflower can be a little bland on its own, so my favorite cauliflower recipes have some real flavor to them! This amazing soup from Mommy Cooking is loaded with spices, and a curry coconut soup is really hard to beat. Such a great way to put your cauliflower rice to work. 





I have been pretty obsessed with Korean wings lately, so I was especially excited to see these Korean cauliflower poppers from Kirbie's Cravings. Hot "wing" cauliflower is pretty popular, so if you haven't tried it yet, get on it, but you can really use cauliflower as a vessel for any of your favorite wings. 




And because there really are geniuses among us, they have also figured out how to make cauliflower mac n cheese, skipping the noodles for healthier cauliflower. This idea is so good, and you could do your own twist on it, but this one from Foxy Folksy looks pretty dang good. 




If you are into cauliflower rice, you can use it for about a thousand flavor combinations. My favorite is this mushroom, cauliflower rice skillet from Primavera Kitchen. This hearty meal is vegan and carb-free at once. So you get to feel super healthy after you eat it. 




The last cauliflower recipe that I am dreaming about trying is from Pinch of Yum- cauliflower burrito bowls! Everything about this is so good, and I still get regular rice too (though I guess you could switch in cauliflower rice? No meat, no carbs?). Someone try this so you can tell me how good it is.
