Mouthwatering Vegetarian Mushroom Recipes for Meatless Monday
What's the easiest switch you can make for the environment? Eat less meat!
On Mondays, we are exploring vegetarian meals for meat eaters. Cooking with seasonal vegetables can seem really limiting at first, but the possibilities are endless. And it is worth it. Just cutting one day of meat eating out of our diet can keep thousands of tons of CO2 out of the atmosphere a year. No seriously, it's that big a deal. Cutting down on fish (and only eating sustainable fish) can also help with our huge plastic problem, because plastic fishing nets are the largest source of plastic in our oceans. The production of fish and meat come at a huge environmental cost, and we are simply eating too much.
Plus, it's a great opportunity to have some new adventures and try new things. Just another way to take care of the planet AND make life a little bit better!
Ok, I know as an aspiring vegetarian, I should really love mushrooms. But I mostly don't. I definitely like them way more than I did a year or two ago, but I still struggle to find mushroom recipes that make my mouth water.
That said, if you are trying to eat less meat, mushrooms make an excellent substitute. They have tons of nutrition, are hearty enough to be filling, and actually have an earthy taste that make them a bood stand in for beef.
I do love a good mushroom taco now, and I am always looking for more mushroom recipes that have lots of color, flavor, and not too big of mushroom pieces (something about how it feels when you bite into them...). My husband's cooking is changing my mind about them, and there is something that feels so good about changing your mind about something.
So, let's embrace the mushroom and find some yumminess to eat!
I am dying to try this alfredo pasta bake from Pinch of Yum. It looks like one of those things that could become a staple on busy weeks where you don't have much time to be cooking. It feels unfussy, like we could have it in my rural PA Nana's house.
This girl loves goat cheese, and I think this recipe from Peas and Crayons adds it in perfectly. Zingy goat cheese and herbs + earthy mushrooms? Makes total sense to me! Perfect for a party OR inspiration for a meatless meal.
