It's Spinach week! Spinach is an absolute super food, and it does all sorts of good for your body. It is also relatively easy to grow, so it has a positive environmental impact, even into these winter months when fewer and fewer things are easy to find locally.
So, it is a perfect vegetable. if you are a meat eater who is trying to cut out some meat (you should, it's great for the environment), this can be a great place to start.
But the best thing about spinach? You can chop it into tiny pieces and sneak it into your children's food. They have no idea, but they are so damn healthy. Want to add more veggies into your meals add slowly scale back the meat? Spinach is perfect for this. Put half the meat in your lasagna and put thinly chopped spinach in instead. Do it for soups too. The flavor is mild and the texture can be what you want it to be.
Spinach is the sneakiest of all vegetables, but you can also feature it! There are things to love about spinach, so let's focus on that leafy wonderfulness.

Side note, there are about a million spinach recipes. This was impossible to decide. I never knew how much I loved spinach until today.

When you look for spinach recipes, you see lots of spinach, feta, and some kind of pastry. Who can complain about that?!?! Spanakopita is the best! If you want easy, it doesn't get much simpler than these mini spinach pies from Eat, Little Bird. Pair it with a fresh cucumber salad, and you are good to go!
These vegetarian zucchini lasagna rolls from oh my veggies are stuffed with spinachy goodness. They also look damn pretty and fussy, so maybe perfect for a party menu?

I love pasta, and I think if you are trying to convince meat eaters to eat less or go without it for a meal or two a week, you can't go wrong with carbs. These spinach and mushroom gnocchi from Salt and Lavender still have protein from the mushrooms. Plus, it looks really delicious (and that is coming from a person who still goes back and forth on mushrooms).
