Vegetarian Meals to Celebrate a Perfectly Spooky (and Meatless) Halloween
What's the easiest switch you can make for the environment? Eat less meat!
Every week we are exploring vegetarian meals for meat eaters. Cooking with seasonal vegetables can seem really limiting at first, but the possibilities are endless. And it is worth it. Just cutting one day of meat eating out of our diet can keep thousands of pounds of CO2 out of the atmosphere a year. No seriously, it's that big a deal. Plus, it's a great opportunity to have some new adventures and try new things. Just another way to take care of the planet AND make life a little bit better!
I love a holiday and I am never above theme food. Halloween is generally about the sweets (and you can figure out some plastic free ones here), but I thought it would be fun to come up with some meat-free Halloween food so you can party and fight climate change all at once!

I have never really gotten the appeal of stuffed peppers before, but it is literally impossible to deny the genius of these vegetarian stuffed jack o lantern peppers from Amuse your Bouche. Come on! That business is just brilliant. So perfect for the theme!

If you aren't looking for something that literal, this pasta from Mom Foodie has that black and orange color palette. But honestly, the black and white striped pasta she is working with are pretty cool, and you could do all sorts of cool, spooky dinners with it.

If you are going for a more gory noodle, you cannot do better than beet pasta. It is both really creepy looking and freaking delicious. Beets noodles (beets cooked with thyme and olive oil, goat cheese, and lots of pesto) is the most eaten meal in our house. Yes, it's weird.
