Meatless Recipes for St Patrick's Day
Every week we are exploring vegetarian meals for meat eaters. Cooking with seasonal vegetables can seem really limiting at first, but the possibilities are endless. And it is worth it. Just cutting one day of meat eating out of our diet can keep thousands of pounds of CO2 out of the atmosphere a year. No seriously, it's that big a deal. Plus, it's a great opportunity to have some new adventures and try new things. Just another way to take care of the planet AND make life a little bit better!
Happy St. Patrick's Day! This holiday has never been my jam, but I love a theme, so let's do this. Most people think of St. Patrick's Irish food as meat and potatoes, but what if you want to celebrate without meat? Or just center your celebration around plants? We did a St. Pat's party a few years ago and had a rainbow salad, and it was fun, but not exactly filling. I found so many options that would be so fun and hearty, your meat eaters wouldn't miss their usual staple. Where to start?

When I think green, I think peas. Peas are the most delicious of all vegetables, and they can do so many things. I looked up pea salad and WOW- so many choices, so many mayo salads. My favorite is this mint and pea salad from Budget Bytes. Does that not look SOOO good?

Want to be hipster Irish? How about some avocado toast? There are a million iterations of this, but you can basically count on that toast to look green. I want to eat this toast from Fitness Food Diva. Come on, it's a fun twist too. Put your leprachauns in hipster glasses. They already have the beards!

For something that feels a little less fussy, I think To Simply Inspire's deviled eggs with avocado filling are pretty genius.

If you want to do something a little more Irish, you can find lots of shepherd's pies with vegetarian and mostly green filling. I think this one from Minimalist Baker looks relatively simple (an hour to make) while still being super delicious.
