Meatless Monday- Carrot Soup
One of our big goals for 2017 is to really get going on Meatless Monday. We are never going to be a vegetarian household, but like so many people, we could stand to get a little more meat out of our diet for our health and the Earth's. Meat, come at a shockingly high environmental cost. They use so much water, create so much waste (including plastic), and emit a lot of greenhouse gases. Beef uses 11 times the water and produces 5 times the greenhouse gases of other animal proteins, so if you want the most bang for your environmental buck, that is where to start.

Ingredients
2. Let it simmer for about 30 minutes
3. Blend.
4. Simmer again for 30-45 minutes
5. Season with salt, pepper, dill, and garlic to taste
6. You can top it with green onion, chives, or yogurt.

Thoughts for next time
Our's turned out aggressively peppery, so The Boy added a little bit of butter and a cup of water to try to mellow the pepper. It did help, but he says he would use half the salt and pepper next time. I didn't think it turned out particularly carrot-y, but the pepper really was powerful. Like I said, sometimes you have a winner right out of the park, but others need a little work.What vegetarian meals are you trying this week?
