Meatless Recipe Round-Up for this Week of Romance

Every week we are exploring vegetarian meals for meat eaters. Cooking with seasonal vegetables can seem really limiting at first, but the possibilities are endless. And it is worth it. Just cutting one day of meat eating out of our diet can keep thousands of pounds of CO2 out of the atmosphere a year. No seriously, it's that big a deal. Plus, it's a great opportunity to have some new adventures and try new things. Just another way to take care of the planet AND make life a little bit better!

On Valentine's Day, we always eat in, and this year will be no different. Now, when you think of a romantic meal, you probably picture a steak or scallop or some other meaty thing. This week, I am just out to show romantic meals can be totally meatless.

First, you could go for a romantic breakfast (or brinner) instead of a fancy dinner. This vegan recipe for french toast from Lauren Caris Cooks is beautiful and inspirational. You wouldn't even have to make it vegan, just a vegetarian meal would still have protein from the eggs and lots of yummy berries.

When I think romantic, I mostly think pasta (could it be because I married an Italian boy? Maybe so...) and I really think this kale pesto cavatelli from Making Thyme for Health looks so yummy. Is pesto ever wrong?

This orzo from Vanilla and Bean looks just gorgeous and romantic as well. Maybe a little heavy? But the colors, the lemon, and the warmth seems like a homey date night to me.

I LOVE Well-Plated food, and this apple, cheddar and beet pizza sounds SO good! You could even cut the beets to look like hearts if you like being really on the nose (no judgement, we like commitment to the theme here.

We used to go out on dates to get paella, so to me, it feels romantic. Plus saffron is all fancy and decadent right? I have never had vegetarian paella before, but I love the idea (and the peas and green onion are the best part anyway), so I would love to try this recipe from Cook Nourish Bliss.

Lastly, I think gnocchi could make a GREAT Valentine's date food because it is fun and not too complicated to make, and it might be fun to cook together! There are so many great gnocchi recipes out there, but my favorite are from Gimme Some Oven and 1000 Lovely Things. One is earthy, warm and wintery. The other has that confidence to be really, really simple (which can be SO great). It's really what you like and want to do, but I think either would make a great romantic meal.

  1. I like the idea of meatless Mondays, sometimes when I havent eaten meat for a few days I feel better and more energized.
