Meatless Monday Winter Vegetable Recipes

Every week we are exploring vegetarian meals for meat eaters. Cooking with seasonal vegetables can seem really limiting at first, but the possibilities are endless. And it is worth it. Just cutting one day of meat eating out of our diet can keep thousands of pounds of CO2 out of the atmosphere a year. No seriously, it's that big a deal. Plus, it's a great opportunity to have some new adventures and try new things. Just another way to take care of the planet AND make life a little bit better!

I will be honest- I never really liked winter root vegetables- parsnip, rutabega, beets, etc. Then two years ago, The Boy made them for Thanksgiving, and that was so roasty deliciousness. These are the kinds of things that don't always get lots of love in the grocery store, and maybe you wouldn't think of them first. But their lack of popularity and seasonality can make them a CHEAP veggie choice when all produce is looking pretty expensive. Also, did I mention they are delicious? So here is a handful of freaking amazing root veggies recipes for you.

I cannot wait to try this parsnip and apple soup from Lauren Caris Cooks. Though I think it will look slightly less beautiful, I am so curious about the ingredient combinations and I cannot resist a beet chip. Plus, the inclusion of black beans means it should be filling! definitely one of my favorite blogs.

The other one I seriously cannot wait to try is this savory winter veggie cobbler from Saving Room for Dessert. Tell me that doesn't make you want to eat it RIGHT NOW? Maybe not the healthiest recipe ever, but you better believe we are trying it. 

For something totally different, try this mustardy parsnip soup recipe from The First Mess. At first I didn't get it, but the more I look, the more I want to try it.

I am completely in love with Eat Spin Run Repeat, because anyone that can crown their recipe "fancy shmancy" is awesome in my book. Love the look of these roasted veggies, and life has taught us that herbs (especially thyme) are the secret to delicious root veggies!

I try not to do too many salads, but this kale parsnip and pomegranate recipe from Dolly and Oatmeal looks so original and totally delicious. I mean, I would never have thought of the combo she is working with, but now that I think about it, it makes sense!

Parsnips can basically do anything that potatoes can do (with so much less credit!) so parsnip fries sounds like a pretty delicious deal to me. I love this fries recipe from Faring Well- I think the toppings sound really fresh and light.

All these rustic winter veggies taste amazing with goat cheese, so if you are going vegetarian not vegan for a day, I think this tart from Curious Cuisiniere may be life-changing in its awesomeness.

The last one to try is this lentil and winter veggie soup from A Beautiful Plate. Who would think to put them together? But the lentils will bring the protein and the veggies will bring that warm, earthy taste.
